Pan-fried bananas with butterscotch sauce

55g butter 50g light brown sugar 150ml double cream 3 tbsp toasted flaked almonds 4 firm bananas

Preparation

First, make the sauce. Melt 40g butter in a saucepan, then add the sugar. Allow to dissolve, then turn up the heat slightly. Pour in the cream, stir well, then simmer gently for about 2 minutes. Peel the bananas and cut in half down the middle. Melt the remaining butter in a large frying pan over a medium-high heat. When foaming, add the banana halves. Turn them over after a minute or two and fry for a further minute. Then transfer to plates and pour over the sauce. Sprinkle with the flaked almonds.

Whirlpool tips

Make the sauce in the microwave: Place the butter in a microwave safe bowl with high edge. Cover and melt the butter for 1½-2 minutes on 350W. Add sugar and continue the cooking for 2 minutes on the same setting. Add the cream and continue the cooking for 1-1½ minutes on 750W, the reduce the power to 350W and continue the cooking for 2-3 minutes.
